Although March 17 is Saint Patrick’s Day and one thinks of corned beef and cabbage, two dear deceased friends come to my mind for that day. Both were very Irish and the day was an important one to them. Corned beef and cabbage was not the star on their menu, but pasties. Pasties were thought to originate in Cornwall, but may also have been brought by the Vikings when they invaded those areas hundreds of years ago. They are still are very popular today. Unfortunately I never got my one friend’s recipe for pasties. She would make them by the dozens.
